They buried him alive; he dug himself out, so once he grew a beard, they hacked him at the knees, beat him, crushed him, and merrily drank his heart's blood!

he dug himself out = It grew?
so once he grew a beard = It grew leaves?
they hacked him at the knees = The plant was felled? Or cut?
beat him, crushed him and merrily drank his heart's blood! = The plant was cracked open so that a fluid that's inside it can be drunk?

Is "he" a cactus?

They took a plough and plough'd him down, put clods upon his head,

But the cheerful Spring came kindly on, and show'rs began to fall;
John Barleycorn got up again, and so surpris'd them all.

They've taen a weapon, long and sharp, and cut him by the knee;
They ty'd him fast upon a cart, like a rogue for forgerie.

They laid him down upon his back, and cudgell'd him full sore.
They hung him up before the storm, and turn'd him o'er and o'er.

They filled up a darksome pit with water to the brim,
They heav'd in John Barleycorn, tae let him sink or swim!

They wasted o'er a scorching flame the marrow of his bones;
But the miller us'd him worst of all, for he crush'd him between two atones.

And they hae taen his very heart's blood, and drank it round and round;
And still the more and more they drank, their joy did more abound.

Quick but clever! I think this one got solved so fast because it really got us all thinking what on earth could be going on.

I was amazed how quickly people got to the nub of this puzzle. I only posted when it was clear that people had the basic solution.

What an honour to get mentioned in a puzzle title. That's a first for me.
