Fright? Something supernatural?
After eating the pastry, did he die within: seconds? Minutes? Hours? Days? Weeks? Months? Years? Decades?
Was there something wrong with the pastry? With him? Woudl he have died if someone made it for him? If he had bought it? Was something inside that wasn't supposed to be there? Was something missing from it? Did he heat all of it? Did he enjoy it? Were all the ingredients fresh? Were they all what he thought they were?

Did he put poison in the pastry? Did he intend to? Did he mistake poison for pastry ingredient? If so: for flour? Sugar? Eggs? Yeast? Baking soda? Baking powder? Did he intentionally poison it? Did he intentionally poison something else? When he made it, did he intend to eat it? Did he know there was any poison available? Before he died, did he understand what had happened? Relevant what kind of poison it was? How fast it acted? How much was needed in order to kill someone? Did he ever mean to poison anyone? Was it poison meant for animals?

Did the poison get there with the ingredients? During preparation? During baking? Cooling? Storage? Eating? Was it on his hands? Was it a manmade poison? Was it toxic by other routes of exposure than ingestion? Was it relevantly harmless by some routes of exposure? Such as skin contact?

Did he think he could substitute bitter almonds for normal almonds with no consequences?

The man wanted to bake a cake for himself, one that was loaded with almonds (one of his favorite foods.) Unfortunately, he ran out of them and all the stores were closed, so he went into the woods near his home and grabbed some wild almonds he had seen growing there. However, wild almonds contain large amounts of cyanide (which was bred out of domestic strands a long time ago) and when the man ate the almond filled cake he poisoned himself.
